Recipe, Breakfast Casserole

Cooking breakfast is always hectic for me... I'm trying to cook bacon and flip pancakes at the same time. Add in eggs and it's a recipe for disaster. So I decided to make a breakfast casserole for Jon's birthday brunch and I have to say I'll never go back to making eggs the old fashioned way anymore... when I have tons of other stuff going on in the kitchen. This casserole was so easy to put together and then you just pop it in the oven and forget about it!


What you'll need:
1. 1 bag of frozen shredded hash browns
2. 5 eggs
3. 1/2 cup milk (I used almond milk and it worked out just fine)
4. 1 small onion, chopped
5. 1/2 red bell pepper, chopped
6. Shredded cheddar cheese
6. Seasonings- salt, pepper, onion powder, garlic powder

What to do:
1. Preheat oven to 350
2. Coat bottom of baking pan with cooking spray. Put all of the hash browns in the pan as the bottom layer and season to your liking.
3. In a bowl mix eggs, milk, onion, and red pepper. Season to your liking. Pour on top of hash browns.
4. Top with as much shredded cheese as you like.
5. Cook in oven for an hour.
6. Serve with a dollop of sour cream and hot sauce for those of you who like spicy.

(Optional: you could add bacon or sausage as an added layer or just serve it on the side)
