A Quick Check In {Weekend Recap}

Just checking in real quick this morning! It was raining on and off this weekend and so our plan of working on our patio didn't happen... again {womp womp}. Hopefully the weather gets better and we can get it done soon! Here's some highlights of what we DID do:

I found this adorable serving plate at none other than THE DOLLAR STORE! Can you believe it?



We made this yummy snack. It's so delicious... make it! I promise you won't be disappointed.



 

The dogs had a play date AND got new beds





And drum roll please... I got my hair cut!!! I'm donating the 10 inches to Locks of Love and I couldn't be more excited :)

#TacoTuesday with a tequila sunrise! {Recipe}

Mexican food is my favorite and lately Jon has been on board with me! We've adapted #tacoTuesday into our meal routine and I have to say I'm not complaining. We normally just stick with classic tacos (seasoned beef) and sometimes Jon does his amazing chicken tacos (I promise I'll get around to sharing that recipe) but last night we twisted things up a bit by making tequila sunrises to go with our tacos! I know, we get crazy right? ;) 


 

 

Here's what you'll need for a tequila sunrise:
1. Silver tequila
2. Orange juice
3. Grenadine
4. 1 sliced orange to garnish {optional}




In an old fashioned glass I used 1.5 ounces of tequila {1 shot}, a splash of grenadine, and then filled the rest with orange juice. Simple, quick, and oh so delicious. Although it's no where close to being Cinco de Mayo yet, follow my board on Pinterest if you're interested in all things Mexican like I am!

Sriracha Grilled Shrimp

Want a delicious and easy shrimp recipe to cook on the grill? Well here ya go! Just 5 ingredients is all you need. PS. I promise this is not spicy. If you DO want it to be spicy, I'd try adding more sriracha or using a spicier sauce like Frank's.


What you need:
1. Mayonnaise
2. Sriracha
3. Worcestershire sauce
4. Onion
5. Shrimp {peeled and deveined}




What to do:
1. Chop 1/4 of an onion very finely
2. Add 1 large spoonful/dollop of mayonnaise, 2 squeezes of sriracha, and one dash of worcestershire sauce to the onion and mix well
3. Let cool in refrigerator for at least 30 minutes
4. Glaze over shrimp and grill on each side for 5-10 minutes











We decided to serve the shrimp with loaded mashed potatoes and pasta salad {it would also be great on top of a nice butter and herb rice}. Enjoy!

Recipe, Crock Pot Chicken n' Dumplings

My nanny made the best chicken n' dumplings. To this day when I think about them, I swear I can taste them in my mouth. I wish you could all taste them too because they were to die for. Unfortunately my nanny passed away and no one ever got her recipe. I'm sure she didn't even have one though... making chicken n' dumplings was like second nature to her. Every now and then I get a craving for them and I do a crock pot version. Let me assure you, these are NOTHING like my nanny's. But they're still good and worth sharing to all of you!


What you'll need:
1. 1 lb boneless chicken breasts
2. 2 cans of cream of chicken soup
3. Refrigerator biscuits
4. 1 chopped onion
5. Frozen peas
6. Halfed baby carrots
7. 2 tablespoons of butter

What to do:
1. Combine your veggies and 2 tablespoons of butter. Then add the chicken and soup.


2. Cook on low for 8 hours or high for 4 hours
3. Cut uncooked biscuits into smaller portions and add to the crock pot. Stir. Cook for another 30 minutes.


Note: I used an entire can of biscuits and in my opinion it was a bit much. Perhaps use 1/2 or 3/4 of a can instead?

Recipe, Pierogi Casserole

Want an easy weeknight dinner? Prep time for this is about 5 minutes!


What you'll need:
1. 1 box of frozen cheddar pierogis
2. 1/2 onion
3. Frozen peas
4. 1 can of cream of mushroom soup {mixed with a 1/2 cup of milk}
5. Shredded cheddar cheese
6. Green onions


What to do:
1. Preheat oven to 375 degrees and grease baking dish
2. Spread pierogis evenly


3. Top with chopped onion and peas


4. Top with mushroom soup and cheese


5. Bake for 20- 30 minutes


6. Top with chopped green onions

Recipe, 5 Ingredient {Pesto} Pasta Salad

Did your husband just spring it on ya that your in laws are coming over for dinner tonight? Or maybe you forgot about that pot luck coming up? This pasta salad dish has only 5 ingredients so you can whip it up in no time!


What you'll need:
1. Pasta {I used whole grain rotini}
2. 6 oz. jar of pesto
3. 12 oz. jar of roasted red peppers
4. Mozzarella
5. Arugla {or spinach}


What to do:
1. Boil pasta for 10 minutes and drain
2. Combine all ingredients
3. Let marinate and then serve




Too simple, right!?

Recipe, Bean Dip

Last night the hubs was working so I had a cheese plate for dinner. Oh and a bottle couple of glasses of wine. Totally normal right? Yeah, I think so.


On my cheese plate I had various olives {picked up from the olive bar at The Fresh Market}, feta cheese with Mediterranean herbs, and the most delicious naan bread. But something was missing so I decided to whip up a bean dip. All you need is a can of cannellini beans, evoo, garlic, salt and pepper. Blend in a food processor and you're good to go {unless you are me and realize your dog ate all of the lids to your food processors and you have to resort to a blender}!





Mmmmmm the perfect girly dinner complete with Southern Charm on TV!

Recipe, Italian Baked Eggs

I know I'm not the only one who always has an extra jar of spaghetti sauce in their kitchen, right!? And what about eggs and cheese? Those are pretty essential in our house. If you've got those 3 ingredients on hand, you have a quick and easy little dish!


What you'll need:
1. Marinara/spaghetti sauce
2. Eggs
3. Cheese
4. Seasonings: salt, pepper, dried basil, dried oregano

What to do:
1. Preheat oven to 375. Grab a baking dish and pour your sauce to cover the bottom.


2. Crack your eggs on top


3. Sprinkle your cheese (I used cheddar and parmesan)
4. Add salt, pepper, dried basil, and dried oregano to taste


5. Bake for 10-15 minutes
